Nothing is more refreshing on a hot summer day than a tall glass of lemonade.
Until this week! Quite by accident I somehow managed to have both ingredients and it dawned on me I could finally try my Mint Lemonade.
And, oh, what beverage joy! Honestly, it was even better than I had imagined.
Now this isn’t complicated. In fact, it’s so uncomplicated I hate to insult your intelligence by offering instructions, but in order to maximize the minty-lemony goodness…
Start with a fresh lemon. And make sure it’s cold. Reeeally cold. That just makes it all the better!
With the palm of your hand, roll the lemon on a hard surface. Roll it to death, in fact, in all directions until you’re pretty sure the insides of that lemon are all squished up and juicy. (Be warned: I had one lemon explode on me, but only one, and it didn’t really hurt anything. Just eliminated the need for the next step!)
Take a sharp knife and cut an X in the side of your lemon. Don’t let too much of the juice escape!
Then take a peppermint stick–not a candy cane, but the old fashioned peppermint sticks that are kind of soft and very porous, (we used Bob’s Sweet Stripes)–and insert it into the X.
Use your peppermint stick as a straw and enjoy!
It may take a few seconds to taste the lemon, but the stick will start dissolving pretty quickly and letting some of the liquid through. Once it starts coming, it’s like a sprinkler on an August afternoon–cool and refreshing and begging everyone to indulge!
